Mauro Colagreco is everywhere! A dozen restaurants, from Buenos Aires to Beijing and from Dubaï... to Menton. This heart-stopper of a city became his home port, with no less than three establishments, including the world-famous Mirazur which in 2019 received its third Michelin star and became No.1 in The World's 50 Best Restaurants. There’s no stopping the Argentinian-born culinary revelation from dazzling the world of gastronomy.
Mauro Colagreco immediately fell head over heels for this small house and its stunning view of the Mediterranean Sea, deciding to turn it into the Mirazur. Just one year after opening, the restaurant earned its first Michelin star, with two more quickly following. “Stars are a nice reward, sure, but not the aim of my work.” The Michelin guide cannot get enough of the Chef’s exploration of all the flavours of southern France. 2019 is the year Mauro Colagreco and the Mirazur became culinary legends, though he always kept his feet on the ground - literally!
For the Michelin-starred Chef, an environment-friendly and sustainable approach to cooking is crucial. In 2020, Mirazur became the world’s first restaurant to earn a Plastic-Free certification by reducing plastic use in its kitchen by 90%.
During lockdown, Mauro Colagreco had the groundbreaking idea to challenges traditional codes of starred restaurants and signatures meal. "The Mirazur's menu would now have 365 seasons, so that every meal would be unique for diners.”
How does he manage that, one may ask. "My sense of effort, hard-work, passion and my team" he simply says. Much more goes into it, of course.
When he arrived in France as a young cooking apprentice, he knew right away that he needed to be learning with the greatest French chefs. He ended up working in the kitchens of Bernard Loiseau, Alain Ducasse, Alain Passard. "These experiences helped me find my footing and start cultivating my very own style."
In 2006, looking to open his own restaurant, Mauro Colagreco settled in Menton, at the far end of the French Riviera, close to the Italian border. Quite the nod to the multicultural roots of this Italian, Argentinian and Spanish Chef.

This sensational culinary journey is rooted in the French Riviera and its natural wonders. “I’m a gardener posing as a chef” he jokes. Indeed, 80% of the fruits and vegetables served at Mirazur are cultivated in its own biodynamic gardens, the rest provided by local farmers.
This sincere and profound commitment to biodiversity and sustainability earned Mauro Colagreco a Michelin guide green star and made him Unesco Goodwill Ambassador for biodiversity in 2023.

Warm, hilarious and full of life, Mauro wears his heart on his sleeve and his table is open to all. It’s impossible not to feel welcome in his universe, his Latin American generosity and overflowing liveliness able to bring a smile to anyone’s face.
The first time I had dinner at Mirazur, I sat with him, and his numerous Michelin starred Chefs friends – Alexandre Mazzia and the Tourteaux brothers to name a few. Alain Passard could have been among us! There were laughs – a lot of laughs; Champagne – a lot of Champagne; great wine; and dish after dish of food as delicious to the tastebuds as it was easy on the eyes. There was so much life and joy, I kept thinking “how lucky I am to be here!”.

The kitchen, though, was rigorous and highly organized. An immense amount of work. Dozens of timers. The brigade was in the zone, sending each dish perfect down to its minute details to the tables of lucky diners at Mirazur.

Mauro channels his energy into opening new restaurants all over the world. In Paris, I love dining at GrandCoeur’s terrace on a sunny Spring day. Right above Monaco, the Maybourne Riviera feels like a "castle in the sky", bursting with all the flavours of Southern France and the Mediterranean coast.
The restaurant Ceto, already awarded a Michelin star barely after opening, focuses on sustainable fishing. Not to mention the breathtaking views of the Mediterranean! I wish you the joy of experiencing this once-in-a-lifetime moment basked in happiness and sunlight.
